Stuffed Jalapenos

Ingredients..:

Jalapeno – 8
Onion – 1
Cheese – 1 cup (Shredded cheddar cheese)
Chopped cilantro leaves – 1 cup
Salt
All purpose flour – 1 cup
Rice flour – 1 cup
Oil – 8 tablespoons
Turmeric powder – 1 teaspoon

Chilli powder – 1 tablespoon

Preparation..:

Wash the jalapenos in cold running water. Slit the jalapenos and remove the seeds thoroughly and wash them again in cold running water.

Mix the chopped onion, shredded cheese and cilantro well and add some salt to taste.

Stuff the jalapenos with the above filling.

Mix the all purpose flour, rice flour, turmeric powder, chilli powder and salt into a batter by adding water.

Heat oil in pan. Dip the stuffed jalapenos in the batter and fry till golden brown.

Serve hot with ranch or ketchup..!!

Spinach Masiyal

Ingredients..:

Spinach
Onion – 1/2 (Big sized)
Garlic – 10 cloves
Salt

Turmeric powder – 1 teaspoon
Chilli powder – 1 tablespoon
Mustard – 1/2 teaspoon
Cumin – 1 teaspoon
Urad Dal – 2 teaspoons
Red Chilli – 2
Oil – 6 tablespoons

Preparation..:

Chop the onion and garlic into small cubes and set aside 1/3rd for garnishing at the end.

Heat 4 tablespoons of oil in a pan. Add mustard, cumin seeds, urad dal, onion and garlic and saute for few minutes until the onion turns golden brown.

Now add salt, turmeric powder, chilli powder.

Then add the nicely washed and cut spinach leaves in the pan and cook for few minutes till the spinach becomes tender and well cooked.

Cool the mixture and blend well into a puree. (Add water if necessary)

Again heat 2 tablespoons oil in a pan, add mustard, cumin, urad dal, red chilli and the remaining onion and garlic and saute until the onion turns golden brown.

Add this into the puree.

Serve hot with steamed rice..!!

Crispy Chilli Potatoes

Ingredients..:

Oil – 2 tablespoons
Potato – 1 (Big)
Turmeric powder
Red Chilli powder
SaltPreparation..:

Slice the potato into thin pieces.

Heat oil in pan and add the potatoes.

Add turmeric powder, red chilli powder, salt to taste and deep fry in high flame till the potatoes turn golden brown on both sides.

Serve hot with fried rice or pulao..!!

Steamed Vegetables and Rice

Ingredients..:

Oil – 2 tablespoons                            Salt
Cauliflower- 1/2                                 Garlic powder
Broccoli- 1 stem                                Pepper powder
Red Pepper – 1/2                               Rice – 1 cup
Green Peas – 4 teaspoons                  Water – 2 cups
Mushroom – 4Preparation..:

Dice the vegetables (cauliflower, broccoli, red pepper, mushroom) into small cubes.

Cook the diced vegetables and green peas in the microwave for 3 minutes.

Drain the water completely and set aside.

Cook the rice separately in a rice cooker.

Heat oil in a pan and add the steamed vegetables. Add salt, pepper powder and garlic powder to taste and saute for 2 minutes.

Now add the rice and mix well with the vegetables.

Serve hot with potato fry..!!

Jalapeno and Brinjal

Ingredients..:

Oil – 4 tablespoons
Onion – 1/2
Jalapeno – 2
Brinjal – 2
Salt – 2 teaspoons
Turmeric powder – 1 teaspoon
Red Chilli powder – 1 tablespoons
Coriander powder – 1 tablespoons
Tamarind – 1 inch piece
Preparation..:

Soak the tamarind in water for half an hour.

Cut the onion into tiny cubes. Cut the brinjal and jalapeno into circles.

Heat oil in a pan, add onion, salt, turmeric, chlli powder, coriander powder.

Add brinjal, jalapeno and saute for 3 to 5 minutes.

Add the tamarind water (Drain the soaked tamarind water) and allow to boil for 15 minutes till the vegetables are evenly cooked and water completely evaporates and becomes thick.

Serve with steamed rice and curry..!!

Brinjal Puzhi Kolambu

Ingredients..:

Oil – 4 tablespoons
Onion – 1/2
Red Chilli – 2
Salt – 2 teaspoons
Turmeric powder – 1 teaspoon
Red Chilli powder – 2 tablespoons
Coriander powder – 2 tablespoons
Tamarind – 1 inch piece
Preparation..:

Soak the tamarind in water for half an hour.

Cut the onion into tiny cubes. Cut the brinjal into long slices with medium thickness.

Heat oil in a pan, add red chilli, onion and brinjal.

Add salt, turmeric powder, chilli powder and coriander powder and saute for 3 to 5 minutes.

Add the tamarind water (Drain the soaked tamarind water) and to it add remaining required quantity of water (1 cup) and allow to boil for 15 minutes till the curry is evenly cooked and becomes thick.

Serve with freshly cut coriander leaves and plain cooked rice..!!

Carrot and Beans

Ingredients..:

Carrot– 1
Beans – 100 grams
Onion – 1/2
Moong Gram Dhal – 1 tablespoon
Red Chilli – 2
Salt – 1 teaspoon
Preparation..:

Boil the Moong Gram dhal in a separate bowl.

Cut the carrot and onion into tiny cubes and the bean into very thin slices.

Heat oil in a pan and add the red chilli cut into halves.

Add the onion, carrot and beans and salt and saute for about 15 minutes in low heat till the vegetables are cooked thoroughly.

Add the moong gram dhal and cook for few more minutes.

Serve hot with rice and curry..!!

Cauliflower Pakoda

Ingredients..:

  • Cauliflower– 1(Medium sized, sliced into small individual flowers)
  • Olive Oil – 6 tbsp
  • Corn Flour – 3 tablespoons
  • Rice Flour – 3 tablespoons
  • Egg – 1
  • Chili powder – 1 tsp
  • Turmeric Powder – 1 tsp
  • Salt – to taste
  • Cilantro leaves – 3 stems
  • Lemon – 1 (Sliced in circles)

Preparation..:

Boil the cauliflower with salt and turmeric for ten minutes.

Mix the corn flour, rice flour, turmeric powder, chili powder, salt and egg into a batter.

After draining the water completely add the cauliflower to the batter.

Heat oil in a pan and deep fry the cauliflowers until they turn golden brown.

Garnish with chopped cilantro leaves and sliced lemon and serve hot..!!

Bread N Bell Pepper Duo

Ingredients..:

Bread – 4 slices (cut into 1″ length rectangular pieces)
Oil – 4 tbsp
Green Pepper – 1/2
Red Pepper – 1/2
Yellow Pepper – 1/2
Small sized potato – 2
Ginger garlic paste – 1/2 tsp
Chili powder – 1 tsp
Turmeric Powder – 1/2 tsp
Salt – to taste
Onion – 1 (sliced)
Egg – 1

Preparation..:

Boil the potatoes, peel the skin and cut them into 1/2″ rectangular pieces.

Scramble the eggs with appropriate amount of salt and keep aside.

Pour oil in frying pan. Saute the onions along with the ginger garlic paste till they are golden brown.
Add the red, green and yellow bell peppers. Add the boiled and sliced potatoes.
Add the chilli powder, turmeric powder and salt and fry till they slightly turn into golden shade.

Now add the scrambled eggs and sliced bread. Toss it for 2 minutes and remove from stove.

Serve with homemade tomato ketchup for a tangy and spicy delight..!!

Veggie Cutlets

Ingredients..:

For 10 nos of cutlets..

Potatoes – 3
Finely chopped beans – 100gm
Soaked(overnight)
and boiled green
peas – 100gm
Ginger garlic paste – 1 tsp
Besan flour
Red chili powder – 2 tsp
Salt
Finely chopped coriander leaves

Preparation..:

Soak the green peas overnight
Boil the potatoes along with the peas
Mash the potatoes well
Add the beans, ginger garlic paste, chili powder,coriander leaves and salt and mix well
Now add the Besan flour as required and make balls
Slightly flatten the balls and fry them in hot oil till the cutlet turns golden brown..

Garnish with sliced onions and serve hot…!!
