Citrus – Book Review

Citrus is the first recipe book that I had ever read cover to cover. Maybe I read it because I had to write the review but then again I realized that the book was exciting and not just another recipe book.

Citrus by Valerie and Victoria

Citrus by Valerie Aikman-Smith and Victoria Pearson unravels the entire family of citrus fruits, lemon, lime, grapefruit, mandarin, orange, you name it! Each recipe is wonderfully and uniquely crafted with utmost passion and creativity. The recipes are categorized by fruit type. You can also find an index with dishes by course which I find very helpful. There is this whole array of food you can make with citrus fruits as a main ingredient that I had not known or imagined before. This book is an eye opener, especially as the winter approaches. I can’t wait to try more of the recipes from this book.

Egg-less Carrot Cupcake

This is the recipe for a healthier and vegetarian version of my earlier carrot cupcake recipe. To try the regular cupcake recipe check here Carrot cupcake.

Ingredients

  • Whole Wheat flour – 1 and a 1/2 cup
  • Jaggery(not same as brown sugar) – 1 and a 1/2 cup
  • Shredded Carrots – 1 and 1/4 cup
  • Melted Butter – 3/4 cup (12 teaspoons)
  • 1 teaspoon vanilla extract
  • 1 and 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/4 cup – Milk

A Soccer Ball themed Birthday Party!

I am going to take a little detour today and explain what I have been doing for the past two weeks.

It all began with the fact that it was my sweetheart’s 3oth birthday on March 6th. I wanted to surprise him and make it a memorable day for him. So I put on my thinking caps and then everything started falling into place.

The Memory Album

Apart from all the gifts I was planning to shower on my husband, I wanted to give him something special, that he would never forget, the gift of memory 🙂 I bought a personalized and engraved photo album from Thing Remembered with the verse, “You are God’s Masterpiece. Ephesians 2:10” and then filled it with photos of his birth, childhood, college, family, church, his first bike, guitar, dog, mobile and wedding.

Liver Pepper Fry

This is a very delicious and favorite family tradition food. Simple and fast to make, the liver cooks up real quick and the generous portions of ground black pepper has tonnes of good!

Ingredients

  • Goat Liver – 1 pound
  • Shallots (Small Onions) – 10
  • Salt to taste
  • Oil – 5 teaspoons
  • Black pepper – 2 to 3 teaspoons

  • Fish fillets – 4
  • Olive oil – 1 teaspoon
  • Lemon juice – 1 teaspoon
  • Dried Oregano, Parsley, Basil – 1 teaspoon
  • Black Pepper powder – 1/2 teaspoon
  • Salt to taste
  • Garlic powder – 1/4 teaspoon

Paneer Manchurian Dry

Paneer manchurian is a blend of Chinese and Indian cuisine or as we would call it the Indo-Chinese recipe.

Ingredients

  • Paneer – 2 cups
  • Corn flour – 1/2 cup
  • Egg -1
  • Salt to taste
  • Onion – 1
  • Green Peppers – 1
  • Ketchup – 1 tablespoon
  • Soy Sauce – 1 tablespoon

Beef Chili

Beef Chili

This will be another quick fix dinner in the series, although the cook time could take hours. The best thing about crock pot cooking is to mix up the ingredients and literally forget about it. So, lets whip up the least preparation time dinner recipe. Prep it hours before dinner time people 😉

Ingredients

  • Ground Beef – 1 pound
  • Green Pepper – 1 small size (Cut into small cubes)
  • Tomato – 3 (2 – Juiced, 1 – Cut into small cubes)
  • Celery – 3 sticks (Thinly sliced)
  • Red Kidney Beans – 1 cup (Soaked for 2 hours)
  • Salt to taste
  • Chili powder – 1 teaspoon
  • Dried Oregano, Parsley,Basil – 1/2 teaspoon each
  • Grated Cheddar Cheese

Spaghetti and Vegetables Stir Fry

I wanted to fix something for dinner real quick because I made some spicy cookies earlier and they didn’t turn out the way I expected and I was losing interest in cooking for the day. So I thought of something instant to cook and this recipe magically crossed my mind! Easy, quick and can’t go wrong with the taste 😉

Ingredients

  • Vegetables of choice – 2 cups (I used Green Peppers and Mushroom)
  • Cooked Spaghetti – 2 cups
  • Salt to taste
  • Soy sauce – 1 tablespoon
  • Ketchup – 1 teaspoon
  • Olive Oil – 1 tablespoon
